I got my old tires off this evening. The plan for now is to clean these up as good as I can and run them for a bit too see how interested I get into this project. I cleaned up the rust inside and much as I could, will these be ok to run?

Also, I haven't tried cleaning the hubs up, are they just bare aluminum? Will something like alumabrite clean this up?

Hubs are bare alloy but I've never had much luck with any chemical cleaner. Usually it just makes even more mess and leaves alloy dull grey. You would be better off with soapy water and scotchbrite. Your rear hub and brake plate have lacquer of some sort on them, use a paintstripper to remove it. Don't go bigger than 90/90 front tyre and 110/90 rear, the rims are too narrow even for those sizes to work properly but it aint dangerous

I've already got tires. Shinko 244 dual sports. 3.00 x 18 front and 3.50 x 18 rears.

Those rims and hubs look fine, way better than mine were !

I cleaned mine with wire brushes and scotchbrite, primed with etch primer and painted.

Still looking good a couple of years later
