Stainless Steel Brakeline Questions

I've got a couple questions about building your own stainless brakelines.

1) what's "stainless steel" and why does it break the line?

No but seriously:

Does the size of the banjo bolt matter? If the master cylinder is 14mm, and the banjo bolt is listed as having a 3/8 - 10mm bore, does that effect performance?

Theres a piece that is set in between the brakeline on the CB550 that is stock, I believe its the brake switch? It goes Master Cylinder - Brakeline - This piece mounted to the lower triple - Brakeline - Caliper. What is it, and do I need it? Will include a picture shortly.
 
Heres the piece. Can I omit this and go from the master straight into the caliper or is this important?

That is indeed a pressure actuated brake light switch, which you only need if you need it to activate your brake light. If you're replacing the M/C, it may have its own switch.

I've never heard of banjo bolts being a restriction. The banjo bolt size just needs to match the brake line fitting and master cylinder threads.

I use a Spiegler line on my BMW.
