I'm not sure how well they'll bolt right up but I don't see why they wouldn't work.

Will not bolt on.
They do make a very nice bolt on sohc set up

Is that because the linkage is different or will the rearsets just not work at all?

For a bolt on application they mounts are made for the specific bike.
DOHC and sohc CB750s have very different frames, mounts, linkage, ect ect
