Too naive to know better: 1974 Jawa CZ 175 resto-mod and first time build

Admittedly, I am in way over my head. I bumped into a Jawa CZ on ebay and fell in love with it. Didn't win the auction so I started searching elsewhere for one I could buy. Guy in New Mexico had a disassembled one on Craigslist but didn't take me seriously when I called (I live in North Carolina) so even convincing him to sell it to me took a few attempts. Emotionally directed motorcycle hunt complete and now I'm left with this pile of bike parts in my living room and I COULDN'T BE HAPPIER! I plan to keep it stock except for the seat, handle bars, and the giant tail light. And when I say "plan" I giggle to myself because I'd hardly describe any of this as planned. P.S. Patina? Omg, just shining up the tank and fenders and leaving them alone.
The first pics are what the prev owner sent to me.
