SL350 Cafe project

I'm purchasing a 1971 SL350.
The price is right, the bike has pretty low miles (4K) and is fairly immaculate. It would be an easy restoration, but I want to go the cafe route.
Since I'm new to the Cafe world, I have a couple questions regarding the front forks.
I'm positive I'll want to change them out (along with the front wheel) because of their length.
Research here & elsewhere tells me that the CB 350 forks (and a couple others) are interchangable... but:
I'm positive someone out there has done this, can they tell me what changing the fork length and front wheel diameter (and therefore the trail) does to the handling characteristics of the bike?

Making it shorter will make the steering much more responsive. Too little rake and the bike may feel "twitchy". You can help counter this with a decent dampener. Dropping the rear will help, too.
