Rebuilt the carbs before it started running bad then I rebuilt them again thinking something got through the fuel filter causing it to run bad; however that was not the case

I have built a cafe bike out of my KZ 55O about a year ago. About 3 months ago my bike has started acting up. The bike runs and idles, and when you lay on the throttle it revs to red line. However when you put it in gear and start moving it starts acting like it has fuel starvation...
Due to work schedule and Ohio's fantastic weather, I have not been able to go any further on the bike. However picked up a set of these nasty GSXR forks to change up the front end. Once I get it back in the shop. I plan on mocking the bike up and see how much clearance I have with this front end.
Well I did some revision on the sketch as I still wasn't happy with where it was going. Here is the final sketch but I am probably going to change the tailpiece to more sleaker look. I'll be starting next week after I get back from vacation.

I'll make sure ill do that once I start the tail piece! So I put some finishing touches on the sketch. Everything is not set in stone yet but liking it so far.
Next thing can someone tell me if I can get rid of those awful CV carbs and go with mechanical sliders that are on the KZ550?
