After rewinding the alternator rotor, going through the carbs, new chain, new front rubber, drag bars, sissy bar deletion, fresh oil/filter, new fork seals, she's off and running.

Maybe check the free play in your throttle cables, and check the routing making sure they aren't in a bind. I would crank the idle adjustment screw out at least a turn if the cables aren't too tight.
