Ive Got a 1981 Yamaha MX 80 and im wondering what i should make out of it. Cafe although it would take a while. tracker? other?

1. If i were to put a velocity stack or pod on a carb with stock exhaust, would i have to upjet? 2. if i were to only put a straight pipe on would i need to rejet? 3. in ontario, what do i need my bike to have? i know it needs turn signals, head and tail light, operating brakes, a neutrel...

Im getting a (some year) Yamaha DT 175 and making it a Cafe racer or a Tracker. what would it look better as?
