Awesome build man. I think that's really cool that you and your gf will be working on it together. I know I wish mine would do that with me, instead of complain I like my bikes more than her haha. Looking forward to the progress!

This vid shows you how with a simple test light. This vid is a basic walkthrough on the cb350. I'ts dark, but its simple.
I'd buy a manaul or try to find one online. I don't know anything about xs750's, but timing should be similar to the cb350...
X2 for timing. I would get the timing and points adjusted perfect. That would be my first guess.
Also check your fuel delivery, make sure you carbs are getting enough gas.
Tank > petcock > lines > carbs

My swingarm on my CJ360t is really bent, and was hoping a CB360 swingarm would be a direct replacement, since they seem to be very available and cheap. Anyone know first hand?
Plenty of people on here just bob the rear fender to the length they want. Cut it and grind it to the shape and size you want, then paint it black. The light should be easy to mount on it too. Have fun!
