82 XV750 issues after carb cleaning

Having some issues after cleaning the carbs on my 82 XV750. The bike has a little under 5k miles on it. It would only start and run with choke which is what prompted me to clean the carbs. It would idle very high (3-4k) and as soon as I would try and turn the choke off the bike would die. Im pretty new to bikes but I read that this usually means that the pilot jet is clogged so the carbs need to be cleaned.

I got a rebuild kit and cleaned the carbs. I replaced the pilot jet, main jet and pilot screw. I didnt replace the float needle or seat because they were different sizes and I wasnt sure if this would cause an issue. After getting the carbs reinstalled I was only able to get the bike started with the choke on but was able to turn the choke off with the bike still running and was idling at around 1500. Let the bike cool down and the bike started right up with the choke off and was idling fine. This is when I started having issues

Even though the bike was idling fine it would make sort of like a popping sound (misfiring?) but aside from that everything seemed good. This "popping" sound seemed to be coming from the carbs because whenever it would happen the carbs would jump and you could feel something popping inside. I took the bike out of a ride around the block and ran into more issues. The bike continued the popping and at times when it would pop the bike would stutter, kinda like it was losing power for a split second. At one point I was coming to a stop so I pulled the clutch and the rpms started climbing and didnt go down until I left off the clutch and started moving again, that only happened once.

Any ideas what this could be? My thought is that I didnt clean the carbs right but like I said im new to bikes so before I go and take them out again I figured id see if this is something that can be fixed without doing that
