Advice on first build and motorcycle

So I’m looking to buy my first motorcycle and also turn it into a street scrambler/cafe racer. I just need some advice and tips on the base motorcycle though. I want to set myself up for success. The motorcycles I’m looking at right now are

1980 KZ 750 LTD with 2 spare bikes used for parts and a box of parts
-19,000 miles and it runs with very little rust —$600

1982 Honda gl500(fair condition)
-28,000 miles and doesn’t run. Needs master cylinder and battery—$400

1981 Honda CB750 (good condition)
-35,300 miles and runs. —$700

1979 KZ650 (good condition)
-37,000 miles, turns over—$550
 
None of those are a particularly good choice for a scrambler type build, especially for someone who is inexperienced with bikes. I would look for something like a 400 to 650 air cooled chain drive single or twin.

I would agree mostly... The gl500 I'll assume is a SilverWing.. Very close to a CX500 can make an interesting Scrambler check out CafeRacer Garage on Youtube for an example but true not a project for a first build maybe...but who are we to say?.

Personally I would look for Honda CM/CB 400 / 450 twin cylinder bike. I believe Suzuki made a few in the earily 80's as well... Something air cooled with EFI ignition a twin OR scramble a earily 80's single cylinder dual sport. Lots of cool builds on Honda XR/XLs and Suzuki DR's
