Could also be your slide is dragging, or the needle is bent. Slack in the calbe can cause the thing to unlock from the slide as it's only held in place by the spring-pressure.
You need the right caps for your carbs - with threaded ends for the cable adjuster to mount to - that prevent your cable jacket from entering the carb body.
You can get these in both straight and curved to improve clearance to the frame etc. Throttle cables for VM carbs are not going to come with curved metal ends already on them.
