Wanting to build a bobber need help!

Ok im new to owning a motorcycle, and have recently acquired 4 bikes that have potential, i have a mechanical back ground in the automotive industry, and im currently in a apprenticeship for tool and die making, so im sure i have the skill set to make this happen but im needing some advice on do's and donts when venturing down this path, but ill start off with the bikes i have acquired

1974 Suzuki gt250
1982 Suzuki gs450
2000 Kawasaki vulcan 500
2006 johnny pag spyder 250

If anyone can help and guide me in which to start from it will be appreciated

I loved my vulcan 500 tons of trouble free miles. Just sold it when i moved to new orleans.
 
A friend of mine was a Pag dealer. He would buy bare frames and put 350-450cc engines in them. Just an idea for your GS450 or Vulcan 500 motor.
