What the school has taught us so far, please feel free to correct me if I get something wrong.
Main Object of the braking system on motorcycles is to convert kinetic energy into heat. With that in mind..
Brake Fluids:
Requirements:
High boiling point
Low Freezing point
Resist Aereation (No air pockets)
No Evaporation
Lubercate
Be compatible with rubber and metalic componets.
Maintain rate of expansion and contraction.
Types of Brake Fluid: (Dot = Department of Transportation)
Dot 3 + 4 - Glycol base-Polyalkylene
Dot 5 - Silicone base with Polylmethysiloxanes
Dot 5.1 - Glycol
HSMO - Hydraulic System Mineral Oil
Dot 3+4
Both fluids are compatible, but you really should not mix
color from clear amber to brown
water soluble
Is compatible to rubber and will blend well together.
Hydroscopic (absorbs moisture)
Disadvantage: Dissolves paint on bikes.
Dot 5
color purple to blue or voilet
High boiling point
Non reactive - Inert
Disadvantages: Not Hydroscopic (does not absorb moisture -
will allow water into calipers - spongy feel to lever)
Expensive
Ok if spilled on paint ?? not sure..on this point.
Not compatable with other brake fluids DO NOT MIX
Dot 5.1 - sorry I don't have a lot of info on dot 5.1

Mineral oil contaminatoin (most oils are mineral) used in brake systems will cause severe swelling of all rubber parts and must be replaced.
Side stuff:
FYI: The average braking system absorbs about 2% moisture a year. This reduces the boiling point of the brake fluid.
Always use fluid from a new sealed container (less moisture content than if you have one open on the shelf) All brake fluids once open will absorb moisture.
Change/Flush brake fluid every 2 years - moisture reduces the boiling point of brake fluid by 50% with appox a 4% contanimation rate.
When in doubt flush.
