Cool! I hadn't really planned it, but ended up ordering an m-unit too. Mine hasn't come yet, so I'll count on you to figure it out so I can follow your steps ;)
Thanks!
Here are some photos of my 520 conversion. The rear sprocket is for a Suzuki DR 750 and the front sprocket is for various 90's Kawasakis. The chain is a very narrow d.i.d chain.
Front first. The sprocket has a section which is 2.6mm wider as shown here:

Another test fitting of the rearset. Next day in the garage I will play with the angles and put on a longer transferrod.

With the top breather cover off, the frame slid nicely over the engine.

Time for updates.. Got the engine together today. Was a bit of a hassle bechause previous owners had ruined the threads on almost half of the 20 bolts on the valve cover. That will be a task for later, to fix the threads and get a set of new suzuki bolts.
I ordered a set of oversize oil drain...
Thank you :)

The pegs are made on both the lathe and the mill. Here is a photo from a test I did with some plastic. When moving to aluminum I went down in size for the mill endpiece, I used a 3.2 mm Dremel round head. I also had to make a...
Had a go with the sodablaster today. Impressed with how clean an dry the surface is afterwards. Washed the pan in diesel first then blasted it. Gave it a coat of BMW grey to finish it off.

Very nice work! Although you're going a different route with your build, the process reminds me a lot of my own.
You definitly overcome your lack of experience with loads of imagination, creativity and the joy doing what it takes to get where you want.
I'm impressed :)
Today I got to finish one of the parts that I've really been looking forward to see finished. The Motogadget MIni embedded in the headlight. The result is not perfectly symmetrical, but close enaugh :)

Got som time with the bike today. Did a test of the rearsets on the brake side. When i have the final measurements for both sides I will make some more parts on my friends cnc-router.
The arms that hold the linkage will be about an inch shorter and much slimmer in the final version.
Pictures...
I have a friend with a cnc-router, so I decided to make my own rear sets. Excited to see how that goes:

Wanted wider rear wheels and also wanted to get rid of the cast wheels. So I got hold of a 1977-9 gs750 hub. This hub is for both disc brakes and spokes. Ordered a 4.25x18 aluminum rim for it and powdercoated spokes and hub. The rim was powdercoated by the supplier.

I have no previous experience with metalwork, so behind every part is a lot of Googling and hours of Youtubewatching.
In the next picture I've made some kind of buck to bend the rear seat around:
