I would go with the 5th. I think if you use the 3rd the end points of the wings will come too close together on top of the tank. But if you would use the 5th. I would still them a bit closer to the bottom of the tank.

Re: Just Another CB750F Cafe Racer 1979 DOHC second that, very clean bike. The thing mounted on your lower triple between your brake lines is a splitter. The master cylinder is in the same part of the brake fluid reservoir.

Is the engine stuttering when trying to climb in revs while riding, or is the engine drowning (more of a bwroap sound). Stuttering would indicate lean most of the times. Drowning would indicate too rich. First quick try should be getting the carb leaner when you started with a stock bike. Those...
