    I've always loved the Bulti's too but their as rare as hens teeth down here. One thing to consider before you go the café route, from memory the Alpina has a motor tuned for low down / mid range torque and has quite a heavy flywheel and you may be disappointed with the result.

    When I needed to restrict the steering lock on my SV1000S to suit the superbike bars that I'd fitted, I drilled and tapped a 6mm hole in the side part of the steering stop and screwed in cap screws. Took about 30 minutes and it can be easily reversed if you want the full travel again.

    Maybe the best way is to go back to the std shock length which will give you better cornering clearance, by the way, I like your FZ 750 - I'm a great fan of their 750's and 1000's.
