I've just done this on my cb900. You get a 'matting base' you add to your 2K clear to alter the gloss level. I went with a 1:1 mix because I wanted a satin finish and it worked well. You would need to start with a low matting amount to knock the edge off your gloss, but would need to test it...
I think the drum brake will be your sticking point I'm afraid. All the 900s had 18" rears in various styles, as do the 1100Rs. My VF750 also has one, but is the boomerang style. The 1100Fs have 17" rears. All are disc brake though.
