The brass peices are different jet sizes for tuning and the cables that come with it should be relatively intuitive to install, as there is only one bracket on the carb that can facilitate it. Good luck!
Yeah we need a lot more information in order to help you. My kz400 has pods and exhaust and would run rich as heck with no top end power until I went to a smaller than stock main jet. As confusing as it sounds, it helped right when I was considering tossing my own bike into a river.
Just make sure you don't lube between the main bearings and crank case lol. I only say this because I know someone who did this and was lucky enough to ask before continuing their build. Good luck!

Honestly, I would have to agree with surffly. Don't cause yourself headache for no reason, spend your time on other areas of the bike first especially if it already runs without issue. Drive it till it breaks

Vonyinzer suggested the best option. The "self etching primer" is called Veriprime if you need another name for it. If you take your time, you will have an awesome paint job following those steps.
