1974 Honda CB360 ??Restoration/Cafe/Brat??

Hello everyone, I am new to DTT as well as motorcycle restoration. I am only 22 years old and motorcycles/dirt bikes have always been a huge part of my life. But I recently acquired a '74 CB360 from a family member and plan to either restore, turn into a cafe racer or do a Brat style type mix. Not sure yet, which is one reason for this post. I have had a lot of input and 2 cents from family already saying I should restore the bike and keep everything original, but me being young and new to actual mechanical work I want get in there, get dirty and turn my own wrenches. I will post some pictures for you all to see and would love y'all's input. The bike seems to be in pretty good condition and has all original stuff on the bike which is one reason I can't make up my mind to restore or create what I see in my head.

The gunk you are seeing in that picture is just thrown oil on the chain and dirt from road grime. Some of the issues that differnet oils can cause is your clutch slipping when shifting up and down but I haven't had any problems with mine with a few different types of oil. If you look through my profile you'll see my build with my CB 360 as well. It was a pretty clean bike to begin with although a non-runner and I felt like it would be a disservice to turn it into anything but a restore project. So what I did was buy second-hand parts to modify and then keep the original parts to always be able to return the bike to original condition. Parts for the cb360 are relatively easy to come by online even though only made for a few years. If you need any help feel free to contact me with any comments or questions as I've taken most of this engine the bike apart and fixing mine up.
