1981 XV750 Re-Jetting Question

Hey guys i am after a bit of advice in regards to carb re-jetting.

I have a 1981 XV750 and have done two common mods...replaced the factory airbox with a K&N filter (RA-076V) as the original box was missing and I have just replaced the stock exhaust for two reasons...one the previous owner bashed out the mufflers and two the rear exhaust was rusted out.

I have just finished building my own exhaust out of 1 & 3/8 standard exhaust tubing (1mm or 1.5mm thick i cant remember) with a free flowing shorty muffler on it.

Obviously after replacing the standard airbox with the K&N filter it will be getting a whole lot more air into the carbings hence making it run lean (it has a bit of a dead spot mid RPM range under wide open throttle)

Before i detonate the engine or burn out a valve can anyone on here shed any light on what i should do in terms of main jet size, pilot jet if necessary etc?

I know Dynojet have a stage 1 kit which is suitable for a aftermarket exhaust upgrade only. As i have a K&N Pod and full, free flowing aftermarket exhaust i would assume i would need larger jets than what the stage 1 kit offers. I have seen many XV750 cafe racers out there using the stock Hitachi carbs with very similar exhaust/intake setups to mine so i know it can be done somehow.

Any help/advice would be greatly appreciated.
