I'm with Noel on this one...$3500 would get you a lot more bike (less expensive to maintain, faster, more reliable, did I mention faster?) with one of the Jap standards.
I'm also 6ft. tall and would need forward controls....

well.. I do believe that Benji of BCR Cafe Racers, makes a cafe racer kit for the sportster..It looks pretty cool & Ive never seen a harley Cafe Racer on the street before...

Sounds pretty cheap and the 883 is enough power to learn on. The Screaming eagle intake kit has already been installed so that'll save a few bucks and give a few cheap horses. You can also bore it out to 1200 easily if you like the bike.
Where abouts are you located? I'm pretty biased toward Kawasaki...I love my kz650, and I've seen a lot of them in really nice shape go for well under $3500. The Suzuki SV650 is an awesome bike if you prefer newer, and you can always find them for around $3k or less.
Check Craigslist for your area, you're bound to find something that's along the lines of a CB750, or similar Kaw, Suzuki or Yamaha...
Not much to look at stock, but they're easy to mod into a wicked cafe. '81 was the first year of factory electronic ignition too, so no points to dick with. Over $1K is a little more money than I'd expect to pay, but then again the market is probably way different in FL than it is in Nebraska...
I dont know about HD pricing but here is a guy selling one of those already cafe'd for 6K. so maybe $3500 is a good deal. as for the bike, im not into HD cafes. Good luck on what ever you decide to buy.
