What role do the air adjust screws play when your throttling? How does the bike behave when they are not set correctly?
 
Mostly, they affect slow speed throttle. In is rich (slower idle), out is lean (faster idle). You'll know if the pilot (slow jet) or other factors are making it lean if the air screw is turned in more than the initial factory settings. Basically, if you have to richen the air screw, it is running lean. The opposite is true if it is rich. If it is way off, it will have a hard time starting.

Part throttle is mostly affected by needle position and partly by the main jet.

Stumbling could be a few other things too. Make sure you have a good strong ignition and a good coil ground. The feeling of carb stumbling may actually be ignition missing.

Read your plugs to see if you have a lean or rich condition before you start troubleshooting. You might go down the wrong path. The carb tuning should be the last step in overall tuning. Consider all the non-stock parts on your bike (air pods, exhaust, etc). These additions affect the air-fuel ratio.
