CB350 baffles, pods, rejetting guide

I have a '72 CB350. It had no mufflers, 4" baffles and pods. I'm pretty sure it needs rejetting and a mixture change, but I'm yet to find anything on how to do it. I have found resources on how to technically get into the carbs and do the work, but haven't found anything on how to determine what sizes to change the jets to. And will I need to change the pilot? How do I know how much to change my mixture?

I seem to find small snippets of things related to this, but wondered if anyone had any definitive guides or ideas that could point me in the right direction.
