You can tell by putting your hand close to the headers after it runs for 20 seconds or so because the firing cylinder's headers will be warm. Don't burn yourself though.

Did you bench sync the carbs before putting them back on? You will need to do a vacuum sync at some point which will definitely iron out some of your fueling issues. Is this a CDI or points ignition?

There is a safer way than this, infrared temp gauge.....even the cheap one from HF will do.
AdvCo said it well, it sounds like you need to properly synch the carbs and that should smooth out a LOT
Have you gone through the ignition system?? New plugs? What condition are the plug caps in?

These are very useful, you can even tell sometimes if the cylinders are not all running the same by checking the temp of the exhaust close to the head, not an exact science but a good quick took. I've cooked a few spots on my arms over the years, lol.
 
I've figured out that I am indeed firing on all cylinders. Therfore I cleaned it up real nice and took some pictures. It is smoking a bit though. White smoke, so I'm guessing I've got water somewhere.







Also please excuse my terrible seat that I couldn't figure out lol

I have not bench synced them. I am pretty new to overhauling an older motorcycle and I honestly didn't think that was a thing. I'll look into it though!

Bench sync: use a flattened paper clip under each throttle plate and adjust the sync screws so that each plate has the exact same opening, and same drag on the paper clip. Similar to using a feeler gauge. You will probably have to screw in the idle speed screw to get the paper clip to fit under there, and remember to readjust it when you're done or it will fire up at a higher RPM. This will get you running close to good, but a proper vacuum sync is necessary to get them running perfect.

White smoke from where? The exhaust? Or crank breather?

Alright, so installed new coils, bench synced the carbs as good as I could. Pulled the plugs to check for oil and I find white residue on the tips (phrasing) so I've ordered new jets (120s since I'm running a 4 into 1)
