Beautiful bike!
I'm usually the first guy on the block to modify a barn find, but considering the exceptional condition of the bike and the fact that - as far as I can tell from your photos - it looks pretty well original, IMHO I'd look at a nice but "rideable" restoration (I'm not a big fan of restos that are 10X better than the factory made them).
Of course you can go to town on the motor internals, but man o man, what beautiful bike!
