GS750 Carb Tuning help!

I am new to the DTT site, and overall new at going through forums for mech. help i recently bought a 1983 GS750 that is on a Gs1000 frame and body with the GS1000 carbs on it, bike ran good (decent) with air box and free flowing Vance and HInes 4-1 exhaust it did have flat spots and sputting through accelerating, and over the last month i have taken the bike totaly down to the frame and cleaned it up and jumked bunch of parts and cleaned carbs and what not. my latest set up was with pod filters to a restricted exhaust. the exhaust is now, same 4-1 stainless headers with a old school Harley tip. Pod filters were too much for the carbs so went back to air box and it starts just rough,

Problem- shoots white smoke periodically and exhaust air seems excessivly hot and my first assuption wa its running too lean, not sre what other options may be, so i tore it down again and moved the clips up one notch on the needle. and it started up again and i have yet to mess with the air screws or anything. i was just wanting some external advice.
