I forgot to mention the new front and rear calipers to go along with the rest of it. I'm not trying to discourage you but just bring up what it might take to pull it off. It sounds like you want the bike to work well so I'm sure you'll do the research. I just don't want to be on pins and needles begging my bike to turn in the turns and stay straight in the straights.

cognito's triple trees are like $750 for ones corrected for geometry. His hub is $330. his stem is $120. hub spacers are $36.
then you'll be about $100 in bearings from allballsracing for steering stem and wheel bearings. Then spokes and rim if you're not going to re-use what you have laced to the cognito hub.
Option 2:
There's a member here making raw triple trees for about $400 for a top and bottom. you can have them set up to use the stock stem, but you'd have to grind the weld off the lower tripl to press the stem out, and press the stem into the new triple.
