help with syncing carbs

hey guys, first of all im new here (what up! ;D ) and im working on my first cafe build. I just bought a cb360 last week and im working on syncing up the carbs. i bought a two cylinder vacuum gauge syncing kit

i warmed up the bike, and then connected everything. the gauge's needles were bouncing around from like 5 to 10 on the gauge. i saw a video on youtube of how to sync carbs using these gauges. the only difference was that it was on a four cylinder and that dudes needles were stable as hell. you can see if you go to 2:10

im guessing it has to do with the idle, i turned my idle up to get the to stabilize a bit but i had to turn it to about 4000 rpm. it just didnt feel right. :-\

i also cant figure out what screws i need to turn to sync them up. is the the little brass pilot screw on the sides of each carb? when i turn them nothing really changes. i cant seem to find a screw that is in the middle of the two carbs like in that first video.

any advice would be greatly appreciated!

you sync the carbs at idle and at about 3-4k, and honestly, if you aren't looking at the manual to sync the carbs and are adjusting the idle mixture, you need to go back to step one and get the manual and read through it to understand what you're doing and why. also, those meters should have a needle screw inline with the hose to trim off the bounce, I've never seen them without those inline valves, and I can't see them being any use without them
