My bike is almost finished but I am really uneasy about the stock spoke wheels mainly because I'm afraid of getting a flat. I would really like to switch over to a tubeless tire but would obviously need a rim that could work with that.
I have a 1979 KZ750 twin with 19" front and 18" rear spoke wheels. Can someone please help me with a rim that would bolt right up to this bike? I would like to reuse as many stock parts as possible.

In terms of road debris giving you a flat, a tubeless tire has no advantages over a tubed tire.
I could see how you'd think the spokes could poke a hole in the tube and cause a flat. But, why not get some rim tape (the rubber kind that sits in the groove where the end of the spoke and the wheel meet between the spoke and the tube) and call it a day? Your wheels should have come with something like this anyway.
Also, it might pay to check your wheels are laced correctly. Ideally, the spokes won't poke out enough to even touch the tube.
Sorry I should have been more specific. What I meant by afraid to get a flat with spoke wheels is from road debris and the fact that if the inner tube goes flat I'm screwed. With a tubeless tire I could plug it, add air and be on my way in no time.
