If you lower it, I'd suggest buying a pit stand and spools, and removing the center and kick stands.

I am going to remove the center stand, but keep the kick stand.
The height of the bike will not be much lower than original, but instead of low rear and high front it will be low front and high rear.

Most of my riding in the country so I'm often parking on soft ground. I have a Monster and it only has a side stand, which I think they made too short, so I need to carry a pad to keep it from sinking into the ground. The bikes I have with centre stands can be propped up easily almost anywhere and once set will stay there so I don't use the side stands. That's the one I'd take off yours, the centre stand tucks up nicely.

I have had 3 Monsters and I never missed a centre stand, but I see your point.
For my use it will be ok with just the side stand, and I don’t mind loosing that extra weight.
 
I'm not sure I could ever ride quick enough to worry about the weight of a kickstand and at 60 the time to find out has past.

Some progress.
I got my revcounter/speedometer, made a deep bracket for it to mount it in a low position. Also made a little front fender and the seat is almost ready.
Tested the rear light and it works great.
 
I have decided on a color for the bike and I went with a dark blue.
Now it’s a lot of boring work filling, sanding, spraying, repeat, repeat......
Also I have made a new rear brake line and clutch wire. Waiting for parts to finish the front brakes and throttle wires.

The old V50 tank was full of rust so I bought a large pack of citric acid because I heard it was effective against rust.
I mixed it with hot water and Filled up the tank, let it work for 24 hours and the rust was gone.

Now I am debating whether I am going to make a little fairing on top of the headlight.

decisions, decisions....
 
Beautiful bike. As others have commented, the lines of the seat look OE & match the tank (great choice BTW) & side panels perfect.
 
M unit blue hooked up and working great! Cool with keyless go and alarm system.
Next up is the ignition system, going to use original digiplex for now.

can you read the speedo with it at such a flat angle?
Yes, clear as day. The bike is quite small and i am quite tall, so the angle is no problem. I did not want it to stick up too much above the triple tree to keep the profile of the bike low and sleek.
 
I finally got the seatpad cut to size and made up some brackets for the Lafranconi’s.
The seat is made from 40mm closed cell foam, almost looks like alcantara.
