New CB360T project questions.

Hey guys. Its been awhile since I've been active on the forum but I am now back! Life stuff gets in the way sometimes ya know.

Anyways.....

I recently obtained a new project bike from a gentleman who was in the midst of a cafe build. He had another child ( life stuff) so he had to give up on his build for lack of time.

Everything seems to be ok with the bike. The engine has compression, new tires, chain, bars and some other things here and there. The one thing that is not OK is the wiring harness is hacked to hell and back. Wires are hanging out everywhere. I have my wire diagram for stock but its a mess.... I plan on inspecting the carbs/ rebuild if necessary. Then hotwire the engine without the battery (because there is none) to see if i can get it running for a hot second. I want advice on what to do with the wiring harness. The bike will be kick start only, running headlight and tail lights, with a battery of course...Thats it.. pretty simple.... Should I just take out the old harness and start from scratch which seems much easier to me, or, fiddle with the old harness?

I've researched and found plenty of simplified diagrams so rewiring should not be an issue.

I appreciate any help in advance and I'm sorry if this topic has touch upon other threads. I searched a bunch and could not find the exact advise I was looking for.
