Tried the bare spring saddle thing awhile ago, liked the look, the problem I found is that the springs would pinch my ares as they stretched and recoiled.
Maybe a heavy clear vinyl or plastic cover?

My plan was to sleeve each spring with a leather tube. If the bike ends up shiny and blingy, I might sand the frame smooth and have it nickle or chrome plated.
As always, Ian Barry remains a massive inspiration.
He uses the snap on cover I was suggesting. Something to prevent cheak damage from pinching springs but can be pulled and stuffed in a pocket when you stop.
Well, his is in a whole 'nother universe league He handcrafted everything you see - probably wound his own springs too
I think whatever I come up with to cover the springs I'd tend to leave it on. Most likely it will be a simple sheet of leather backed with some thick wool padding clipped onto the seat, just covering the springs leaving as much of the frame exposed as possible. But we'll see how the bike progresses. Nice thing about upholstering a seat like this is it's dead easy and cheap to change it up whenever you want.

I would think wool/felt padding could get caught in the spring coils, maybe sleeve with some 'clear' fuel line instead of leather and don't use a cover?
Now I've thought of that, I want one for my XS : 8)
The other notion is to wrap sections of the springs - say the middle 5, then the outer sets of 3 for a sectioned look. Would look cool and be comfortable. too.

I know Brooke saddles used horsehair in the 40's/50's (my old man used to just make statements when I didn't know stuff)
I forget what that purpley stuff is, I believe it's cotton based?

Yeah you can buy 'Lycett' seats on eBay for $100 to your door all day and that's a Wassel branded one (made in India no doubt). For $130 or so you can buy the rider and pillion kit direct from India. But they're all massive - 'small' is 14 inches wide at the widest point. The pillion is 11 inches wide. It's nuts. Comfy for the nuts, but nuts. Mine is 12 inches wide on the frame so should look a lot better than the 14 incher.
