Rebuilding engine, which solvent for cleaning?

Bought my first bike a few weeks ago, a '71 CB350 for $60. Was sitting in a field for 3 years with all fluids drained. Needless to say the engine is stuck, so a rebuild is in order.

Whats the best solvent to use for cleaning the engine parts? I have had great success running seafoam in engines, but would it be the best for cleaning the engine parts?

Carb cleaner is my favorite stuff, I buy lots of cans of it because you can just spray the grime away... rubber doesn't get along with it though. In my experiance it doesn't matter what brand.
