Scammed on Craigslist... I "know" the guy. What can I do?

jh321, what state do you live in? I'm an LEO and might be able to shed some light on the process for you.
Document EVERYTHING. Take notes and save and print emails, texts and copies of your contract. This situation is going to escalate and will not go well. The information you document will play well in your favor when dealing the police and/or legal system in the near future. As mentioned, record a conversation if it is legal in your state. Have a second conversation where you state you are recording the conversion and see if they change their story. Be calm, matter of fact and be firm with the sellers. Do not get emotional or threatening in your dealings with them. The sooner you go to the police, the faster you are going to resolve this. Consider placing a lien of you own against their property until you get your titles, other bikes or money back. A simple background check or a search of public records will reveal their previous charges, convictions and history in the court system. If they are on probation or parole, you can use this as leverage to resolve this situation. People suck, good luck.

Basically, I just PM'ed him telling him to set a date to get his money back from the guy. If he doesn't comply, then go to the magistrate in the county the transaction took place and attempt to swear out a warrant for theft by deception or theft by conversion (charges we have in GA).
