Stupid CV carbs... (1983 GS 650gl)

I just got the carbs back together and on the bike after cleaning them and replacing some hardened rubber parts. I managed to get it running with a shot of starting fluid but it would only run on full choke and crazy-high idle (sorry, currently no tach but sounds like 3k+). I messed around with the idle adjust knob which did literally nothing and then wound in the throttle cable adjust on the carb side. I managed to get the idle to come down but it won't start without the ether, dies when you give it any throttle, and doesn't want to run with the choke completely off. I'm admittedly terrible at working out the bugs on CV carbs so I don't know where I should start. Also, the airbox is off and out of the bike while I try to get it running, would that make such a drastic difference?

As many, including me, will attest: it's easy to think you have a carb clean, but not actually have it clean.

Also, be sure to check for air leaks. The seal between the engine and the boot, the boot and the carb, the carb and the airbox must all be perfect.

Yes the airbox makes a huge difference, but screaming idle also sounds like a vacuum leak.
