The L, T, and E models have essentially the same frames. A couple of differences in the tank mounts (T and E have vertical bolt mounts, L is horizontal) The swing arm is also slightly different, though interchangeable. The biggest difference would be the tanks. The E tank is an obvious gem for the cafe racer build, although the T tank is a larger tank and sits nice and flat across the front end without that horizontal lean. My biggest drawback to my L-model cafe conversion was the cast wheels, but I found a set of larger, spoked T wheels that fit without any modification other than the rear hub. Overall, great bikes. If you're planning on doing any sort of major conversion, I think most GS enthusiasts would encourage you to chop the heck out of an L model.
