Yeah, try to do it yourself. It's nice to have your own touch on the bike, to know that YOU did it by yourself and all. Nothing pays that feeling.
The thing is: do you have the skills and the tools needed? That's one thing to keep in mind.
I did it all by myself 'cause: a) I had no one here to do it for me; b) I like mechanics and stuff like that. In the end, I wanted to build something unique, in my taste, had no one to do it around so I went for it.
One month looks ok to me. I'm not sure you'll be able to beat that deadline in a DIY-style build. 2k looks like a lot of money, but I don't know the quality of the job, so it's up to you.
About the seat... That will look very cool, for sure. I'll buy a piece from the US and install it on the bike, building a base and such. You can find lots of seats like that one here

You can also build the seat using fiberglass, there are lots of videos on Youtube showing how it's done.
Ctba has lots of cafe racers, maybe you could talk to someone to get more builders and such.
