Tachometer screw broken

So I think I screwed up today. Getting ready to pull the engine out and went to take the tach screw out it was damaged and I planed on replacing it. I took my drill and drilled the head off as I did with the chain cover (I didn't think it threw as the chain guard just pulled off but this is holding cable in place. So now I have a headless screw holding the cable in. The cable has a bit of play, and I thought I could drill the screw out using small bit and slowly moving up until the screw just breaks. But now I'm worried about if I destroy the threads, if that happens can I replace it with a slightly larger screw.

I did the same thing as you, try and drill through the bolt and the heat from drilling will usually break the bond with the threads. I think I then hammered a small needle file into the hole and was able to back the screw out. It's a common size bolt and I put a hex head style bolt so future removal is a breeze.
