Thinking of a new build - 1970's vs 1980's

So I was thinking of a new build, and have had my eyes set on a 1977 XS750. But having issues finding the right one, with a title that is. Just came across a good deal for a '81 XS, and wondering your guys thoughts on a good cafe build on an 80's bike vs a 70's?

81 XS650? If yes, it would have the drop seat frame with 16" rear wheel, more of a cruiser style. More difficult to translate into a cafe.

'81 xs850... Think it's too modern for the classic cafe build? It's pretty similar to the '77 overall, just don't know how I fell about the 80's vs 70's thing...
