I'm goin with the Avon Road Riders
Now I know they are tubeless but since my rims have spokes Avon's site recommends that I use a tube in the case of a tire puncture, for added safety (since air could leak out of the holes for the spokes)...So should I go with the tube or no tube?

You have to run a tube on these old spoked rims. No choice in the matter. You'll want fresh rim-strips (rubber strip that covers all the spoke nipples to protect the tube) too. Whoever is selling you the tires will have tubes and rim strips.
You should definitely check out Dime City Cycles for the tires etc. They sell the RoadRiders. Yes, DCC are sponsors of DO THE TON, but way beyond that, they're top notch guys, were members before starting DCC and are big supporters of the community as a whole. They're also in Florida
At minimum give them a shot at your business.

The Spitfires are popular and I used to run them. But after riding with a pair of ex-race Avon Super Venoms, I find them too, chunky, heavy and lack "finesse". But they last long and are decently priced. If I can find another pair of cheap Venom scrubs at a swap meet I'll be happy since I'm not going to pay over $200/tire for new ones.
