Does anyone know of a company that may offer gasket sets for , lets say a 1975 CB200T ? thanks!

Both left and right engine side cover gaskets are the most important.

yep, good point, just did that myself!
there may be places on a bike such as a cbx where only a thin grey silicone is required, the name of which escapes me like J110 or soemthing.
also, in the back of my mind is a thought that the genuine honda gasket was used to ensure a specific clearance in some places. CTC carries paper, rubber and cork; all you need is a selection of thicknesses so you can measure the old one and then pick the next slightly bigger size which will squeeze down. The cork composite with the black specks in it- don't use it, it swells and can fall apart.
Princess Auto has a sale on hole punches regularly. cheap way to make neat holes, and at medical supply type drugstores, that carry aids for various health problems , they have scalpels and blades, a nice way to cut it- or with a $1.00 princes auto knife like last night only took two tries as i slipped on the last section. dang.
