Is there a good 2.75X19 street tire still available?

Hi everyone,
Starting to corral the parts for my next (street bike) project and it includes using a Suzuki T500 front brake for added stopping power. The T500 uses a 19" rim and before I tear it apart and relace it with an 18" rim, I was wondering if there is a decent 2.75 street tire available anymore. I guess I can go with a 3.00 width tire if I have to, but really like the look of the narrower tire for this project.
I'm not looking to set low time at the next track day but I don't want a tire that loses its grip completely with five drops of rain either.
Ideas please?

Heidenau K35. Can't say I ever used one, but when you mentioned the size range I recalled seeing one in that size when I was researching my next tire (likely the K34, maybe in the DOT race version...)

Heidenau has a great rep and the tires are generally expensive, is all I really know.
 
Dunlop K70. But I've never used one so have no idea how good or bad it is. Or check the moped sites.

I'm using a 3.00-19 on a Titan wheel on my 1963 Honda. Fits beautifully and even looks good. NOS (stored properly) Grand High Speed. 90/90-19 is pretty common, 80/90 seems damned near unobtainable.
