answering my own questions.

they make the 19in front in the correct size, but the rear only comes in a 110/80-18 and a 120/80-18, which one of those should i go with?

btw, stock is 3.5x18, so about 100/90.

Is go with the 110. Any bigger and I think you may have issues.

I'm assuming you have the stock wheels? Than yes, a 110/80 is going to be too wide.

i have the stock rims, they call for 110/90-18, but all that was available was 110/80. ended up going with them.

Actually, the stock rear wheel can handle a 100/90 just fine. A 110/90 is technically too large, and a 110/80 will be even worse. Why not find a 2.15" wide, 36 spoke wheel and re-lace it?
