She is beautiful, I have a 79, look to do some of the same things, just a little afraid to start in and mess it up.
any advice as where to start? I am looking to have it as a regular/ daily cafe.

I would start out small like I did especially if you don't have much experience yet and then do a major teardown if the bike warrants it. I was kind of glad I did this because then I figured out what I wanted to do exactly and was pretty comfortable with how the bike works. Might be worth it to get some kind of manual for it. I also used this site a ton www.kz650.info a great place for questions regarding the bike, but word of warning there are a few purists over there that cringe when they see cut up bikes like mine. Definately learned a lot from the site though and was able to get her running and plenty of friendly folks over there that will help getting you bike running like a top.
 
Well I have the bike put together and got here fired up sounds great and idles really smooth. I ended needing to go up one size on the mains because it was running a little lean. I am guessing between some valve adjustment on the intake side, new electrics and maybe clean carbs, not sure which but pretty stoked and she is running awesome and has even more giddy up than before. I am going to take my tank to a local powder coater to have the tank cleared. For $100 can't beat the price and should provide me with pretty good protection against the elements and hopefully turn out a little better than the sharkhide product I used. Here are some pics prior to teardown for paint and clear of tail and tank.

Few misc. things, I am going to need a shorter clutch cable might have to get a custom one made along with the throttle cables (both are the shortest ones z1enterprises stocks).
 
Final Shots of the motorcycle just have to put on custom length cables and adjust one of the floats. Runs great and I think the powdercoated tank turn out pretty good.

Ok...still need to fabricate a bracket that will prevent the pedal from going backwards and will hold the exhaust also, kind of a dual purpose because I can't get it tight enough right now without the pedal moving backwards.
 
Very nice. I have the little sister to this bike, 77 kz400 I started a thread on where I am doing something a little different to her. I like the tank and how simple and clean you kept it. Good job.
 
Just what I've been searching for! Love the digital cluster! N new levers.where did you buy the new cluster? Where did you find the wiring diagram? I picked up a 1978 kz650 n planning to do a restore this winter.
