1968 Sears/Gilera allstate 124 Cafe (HELP) ?!

Hey guys! I picked up this bad boy a couple weeks ago! I'm sure all of you will love the look and probably have seen a few still kicking around! I will be making a build forum of this puppy once I have obtained another source of transportation, or have moved closer to my job so I don't have to rely on this thing completely and I can tear it down! SO yada yada yada......

I picked it up at a cycle barn near my city! The guy had it sitting for three years, rolls it out(cob webs and all) and kicks it over third try!!!! I was very excited! I towed it home, cleaned the carb, changed the gas, and away she went. Well, for a little while anyways.......

Tuned the carb as well as I could, and had it running/idling very well for a week or so. Keep in mind I live in a small town and had only run it on back roads, topping 50mph. Ran through all the gears great and didn't have any problems until I ran it on an open road at around 60mph. I was full throttle on a country road, very high RPM's and I felt the bike bog a bit(felt as if it was running out of gas) then some more, and finally pa-pa-pa-spudder pop. It dies on me..... I pulled off to the side kicked it up and tinkered with the air screw, as I thought maybe that was the problem. Everything seemed okay so I carried on, got up to 5th gear and after about 30 seconds in the higher RPM's it died again. I started her up again, decided to stay out of fifth for the rest of the way home and rode slow.

Fast forward to this afternoon-
Ride to work with no problem at all and even run it in 5th gear, made sure not to ride it up to higher rpms. Starts raining as I'm about to leave work, so rather than taking back roads I take the main road which is 55mph and the bike stalls in 5th gear going over a bridge. Starts up again and away I go... Does the same exact thing as I hit the higher RPM's in 5th gear!!!!!! I nurse her home and NOW it's even stalling as I come to a stop unless I feather the throttle!!!!! Whereas it was idling perfectly before!

My mind is twisted around this and I need some help guys! I am okay with mechanics but I have no Idea what could be causing this problem! I am not a certified motorcycle mechanic or anything like that lol. But I know enough to own and service one!

Here is a little bit more about the situation:
-Carb has idle screw and air control screw(controlling the pilot jet I believe)
-The key does not kill the engine, So I pull the spark plug every time I want to kill the bike(is this bad)
-The bike has not needed to run or start with choke on!
-The bike has started to smoke a lot more since I went on the longer, faster ride where it first stalled!

SorrynotSorry about the novel-esque way I portrayed the situation. I figured most of you enjoy a nice read, because you wouldn't be on a forum if you didnt ;) and I wanted to give the best information about the problem itself!

I want to get this small engine in great running condition so I can make it look as good as it sounds!
 
I would remove the carb, take it apart, and give it a good two to four day soak in b-12 chem-tool. Then if tuning it doesn't work, check your valves and timing setup
