Bike is Warm, then dies....Frustrated

I would stick with the carbs, take them apart and check everything is as it should be and the floats move freely, also check that the slides are lifting the same degree, same with the choke, also check the diaphram is fitted properly, I know you have probably done all this but it's worth double checking before you go down another route.
