That might work too. I found a Duc with the tracker seat but when I tried to paste the link it kept crapping out.

Cafe style sportster seat could fit the subframe lines of your bike pretty nicely.

I've decided to go with a tracker flat seat, I've made an under tray and I've got an SS750 rear hugger on the way- so I can't build it up much more until these get here. I'll concentrate on the wiring and the hydraulics for now

I’m really interested to see how that seat’s going to work on that frame. You chopping off the rear subframe?

I think that's going to be the best choice. Your rear frame already looks like a tracker seat shape now so if the seat follows it, it should look right at home.
 
According to my measurements, I may not have to cut the sub frame. The seat should be long enough to cover the rear. IF not I'll cut it and modify
 
The engine is basically the same as the F1, Pantah, and the Alazzurra. Many parts will fit from the later 750 engines also (Paso, 750 Sport, 750SS, 750 Monster, etc). Main difference being the rear head is reversed on the later engines. I believe your bike came with Bing carbs, a switch to the 36mm Dellortos along with the manifolds from Pantah, F1, or Ally will improve performance. If you would like a different camshaft, the cams will fit from those bikes also. The later 750SS cams will fit also, problem being you will have to use two horizontal cams due to the rear head being reversed. The later 750 cams would be the least expensive.......

I have another SS750 engine in a BSA/Brough project (for another day), it's probably 1991 or so. There is no alternator or carbs fitted- I was going to avoid cannibalizing it, but I may have to.
The Bing carbs fitted to mine will have to be re-jetted, as they are original and were fitted to an air box with cartridge filter- I have fitted fly catchers.
Do you have any idea where to start with jetting and also what oil should I run the old Indiana 650 engine on.

I have also wrapped the rear exhaust to alleviate excessive heat at the battery area, as I am now running with no air box see photo

Had to cut off the rear sub frame and make a hoop to fit the seat and carry the electrics. This meant cutting and undoing the work to date with the under tray etc.
So far, I've made the hoop and fitted it with a revised under tray and lights. The side panel gap covers are fabricated- I'm thinking carbon fibre wrap.
The gap at the fuel tank rear bolt is too big- I'll make up a spacer and knurled nut or hex socket or something

I've filled in the side panel gap with a metal piece and covered it in Carbon Fiber effect vinyl (temporary).
I'm thinking I should paint it black gloss or silver.

Any opinions?

It depends on what you are trying to achieve. If you want to just fill the gap, you are fine as you did it. If you want to change the visual line of teh whole side panel tank, I'd think about painting the side panels black or making new ones that incorporate that filler piece.
