First time builder from Upstate, SC

Hey everybody, my name's Matthew. I just sold my old '86 zx600 to start my first ever build: '75 cb360. It was a package deal, I got one mostly complete cb360 along with a parts bike ('75 cl360). Like I said this is my first build, hell its my first time working on a bike, although I've always done my own work on the car.

I think this is gonna end up as some kind of brat/tracker build. I just wish the CL parts bike still had the scrambler exhaust

My first plan of action is to strip it down, clean it up, rebuild carbs, reassemble, try to get the dang thing running. The odometer reads 5687 miles but who knows if that's correct. I've read in a couple of threads about top end troubles with these motors, should I take the motor apart and inspect/replace gaskets or what?
