Ignition timing is a likely culprit. Loosen the points plate and turn it a few degrees clockwise and see if everything improves. If it does, you didn't have the timing set correctly and you'll want to check that again before riding the bike.
Bit more info and history please, did this just start happening? Was it running fine before? Any changes that may have caused this? All components (i.e. carbs, air filter, exhaust, etc.) stock?

Here's more info... I just got it running after finding it literally in pieces in a backyard. All stock, it idles nicely though when I turn the pilot screws to adjust the carbs there isn't a dramatic high rev point? Does this help? And thanks! -D
